
INGREDIENTS:
CAKE:
1 ½ cup flour
2 tsp baking powder
½ tsp salt
1 Cup plain Greek yogurt (or lemon, vanilla)
1 cup white sugar
3 extra large eggs
Zest of 2 lemons
½ tsp vanilla
½ c vegetable oil
GLAZE 1:
1/3 cup fresh lemon juice
1/3 cup of white sugar
GLAZE 2:
1 cup icing / powdered sugar
2 Tbsp lemon juice
WHAT YOU DO:
Preheat oven to 350 degrees
Put flour, baking powder & salt in a bowl and mix
In another bowl whisk yogurt, 1 Cup of sugar, eggs, lemon zest & vanilla
Combine wet & dry with a whisk
Fold in oil
Pour into Loaf pan (lined with parchment) and bake at 350 degrees for 50 minutes
Right before your cake is done make the 1st glaze:
cook 1/3 cup lemon juice with remaining 1/3 cup sugar on stove top, mixing until clear
Remove cake from oven and immediately pour sugar / juice mix over top of cake & allow to soak in ( can poke with fork)
COOL completely
Make Glaze 2:
Stir powdered sugar and lemon juice on stood top until melted. Pour on top of cake and let cook again.
