These are an amazing way to feel like you are getting a treat with dinner but without the guilt of eating starchy, white potatoes!

There are tons of different ways to eat sweet potatoes but this is hands down my favorite way! This recipe can be altered by switching out the spices! You can just use salt, just paprika or just red pepper flakes (use the red pepper flakes sparingly!)
INGREDIENTS:
2 medium sweet potatoes
1 TBSP olive oil
1/4 tsp salt
1/2 tsp paprika
DIRECTIONS:
Peel the potatoes and cut into long pieces, about 8 times and then in half – basically making fries!
Toss in a bowl with oil, salt and paprika (or red pepper flakes)
Line a baking sheet with parchment paper (it’s been my experience that they really start to stick to the pan without the parchment paper) and spread out the SP fries evenly across the sheet
Cook at 425 degrees, turning over potatoes occasionally, for 30-45 minutes. Cooking time really depends on the size of your potatoes – the smaller or thinner they are the less time they will take to cook!
The outsides will start to brown but the center will stay soft, careful not to burn!
