WHAT YOU NEED:
SALAD
1 tsp vegetable oil
1 cup white rice (cook according to directions on bag)
1 can light red kidney beans (drained and rinsed)
1 can black beans (drained and rinsed)
1 can sweet peas (drained)
1 cup chopped celery
1/2 cup chopped red onion
1 can (4oz) green chilies (drained & chopped)
VINAIGRETTE
1/3 cup red wine vinegar
1/4 cup vegetable oil
1/4 cup water
1 tsp minced garlic
1/2 tsp salt
1/4 tsp pepper
WHAT YOU DO:
add all the “salad” ingredients to a bowl *let cooked rice cool before doing this
make your vinaigrette by adding those ingredients to a small bowl and whisk. Then pour the vinaigrette over the salad and toss.
keep in the fridge at least an hour before serving.
