WHAT YOU NEED:
2 sticks (one cup) butter
1/2 cup powdered sugar
2 cups all purpose flour
4 eggs, beaten well
1/2 tsp salt
2 cups white sugar
8 tbsp lemon juice
1/2 tbsp grated lemon rind
4 tbsp flour
1 tsp baking powder
WHAT YOU DO:
Mix together first three ingredients until creamy.
Spread evenly onto a very greased or parchment lined baking sheet with sides.
Cook at 350 for 15 minutes or until light brown.
While that’s cooking, beat eggs in another bowl and then add in all remaining ingredients and mix until blended well.
Add the lemon mixture on top of the cooked pastry while still hot out of the over. Make sure it’s evenly spread.
Bake at 325 for 30 minutes.
Remove from oven and sprinkle with powdered sugar.
Cool for 15 minutes and then cut in small (ish) rectangle shapes.
Store in fridge making sure they are separated by parchment paper so they don’t stick together 🙂
