I am beyond in love with the recipe! It’s the perfect dinner for a cold day, to simmer on your stove top and let the aroma fill your home!
Your family will be begging you to eat dinner! You can do some of the chopping in the morning and then put it all together in the afternoon to save time or just do it all at once!
The cooking time on the stove is minimal since your main ingredients are already cooked going in!
Serving it in a bread bowl from Panera Bread is my favorite but using regular bowls would be just fine too!
WHAT YOU NEED:
1 & 1/2 cups of Potatoes – peeled, diced and cooked
1/2 cup of Water
8 slices of Bacon – cooked and chopped
1/2 cup White Onion – peeled and diced (did you ever buy the onion chopper?)
1/4 cup Green Pepper – chopped
1 Tbsp of Butter
2 Cups of Creamed Corn (from a can)
1 Can of Corn Niblets – drained (you don’t want the liquid from the can)
1 Can of Mushroom Soup
1/2 Tsp Curry Powder (do not leave this out even if you think you don’t like curry! I promise it doesn’t make it taste spicy!)
4 Cups of Whole Milk
WHAT YOU DO:
Boil potatoes (after you have peeled and chopped) in a large pot of water until tender, drain off water and set aside
In a frying pan, saute the onion and green pepper in butter until soft, about 5 minutes. Set aside
Fry your bacon and chop it, set aside.
In a large soup pot combine ALL the ingredients EXCEPT for the Bacon, stir well.
Sprinkle the bacon on top and do not stir.
Cook over medium heat for about 30 minutes and then just let it simmer for as long as you want. If you think it may need stirring you can stir the bacon in at this point.
HOW TO SERVE IT:
I like to go to Panera Bread and get some of their un-cut Bread bowls. They will cut them for you but personally I think they don’t cut enough bread out so the bowl is too small!
Just my opinion but it’s why I like to do it myself at home. Take a sharp knife and trace a circle of how big you want the opening and then cut downwards, cutting out a shape of bowl.
If you can get it in one piece and then pull it out you’ll be so impressed with yourself! Scoop the chowder in the bowl and done!
You can place the bread you cut out on the plate next to the bowl but honestly, eating the bread bowl that has been soaking in the chowder is heavenly!
