WHAT YOU NEED:
3 packages (8 oz each) of cream cheese
3/4 cups sugar
3 eggs
1 tsp Vaniila extract
2 cups mini chocolate chips
1 extra large graham cracker pie shell – most pre made ones sold in stores are too small so I usually make my own in a pie dish. If you buy a box of graham crumbs there is a recipe on the box to make a shell – usually just add butter and sugar
2 tbsp heavy whipping cream
WHAT YOU DO:
Heat oven to 450
Best cream cheese and sugar in large bowl with mixer until well blended
Add eggs and vanilla and beat well
Stir in 1 & 2/3 cups of your chocolate chips
Pour this mixture into your pie shell
Bake 10 min at 450 and then without opening the oven door reduce temp to 250, continue baking for 30 min or until set.
Cool completely on wire rack and then cover and chill in fridge for at least an hour or more
Meanwhile…. place the remaining 1/3 cups chocolate chips in a microwave safe bowl with the whipping cream. Microwave for 20/30 seconds and stir – do this till completely melted.
After the pie has chilled thoroughly in the fridge, spread this mixture on top, evenly, leaving a couple inches around the edges.
Put back in the fridge for 60 minutes.
This can absolutely be made the day before, just keep on refrigerated!
